SHAMROCK TOAST BITES




Making these completely simple shamrock toast bites is as easy as 1,2,3.

What you will need:


3 ripe avocados
Fresh chopped cilantro or parsley
3 tsp sour cream or crème frâiche (optional)
3 tbsp extra virgin olive oil
3 tsbp salt
3 tbsp pepper
1 tsp paprika, sifted
1 jar sliced red pimentos
1 loaf of bakery fresh white bread, pumpernickel or bread of choice
1 decorating bag
1 decorating tip (Wilton #21)
(Or a basic plastic lunch baggie with a corner cut off)
1 shamrock or clover shaped cookie cutter

Line a serving tray or dish with large leafy greens, allowing the greens to hang neatly over the edges.

-Get out your toaster and toast a dozen slices of bakery fresh white bread, pumpernickel or bread of choice.

-With a shamrock or clover shaped cookie cutter, cut out your toasts with the cookie cutter.








MAKING THE PUREE:

-Add ingredients to a food processor, blender or bowl if hand mashing.


-Purée until completely smooth (absolutely no lumps). If you have a problem with lumps, finish by hand mashing with a masher or a fork.

* for a bit of bite, add bacon bits or whatever you can think of to the mix.




-Next, spread your purée onto each shamrock shaped bread, leaving a clean edge, add a sprig of fresh parsley, and a pimento for color.
